    Baked Chicken Spaghetti

    3 cups Diced cooked chicken
    1 can Cream of chicken soup
    1 can Cream of mushroom soup
    1 can Rotel tomatoes

    1 can chicken broth or milk for soups

    ½ cup Onion
    ½ cup Gr pepper
    ½ cup Mushrooms

    1 pound Thin spaghetti or angel hair pasta (cooked Al-Dente, DO NOT OVERCOOK)
    Salt and pepper to taste
    1/2 pound Velveeta cheese

    Cook Chicken add soups and Rotel simmer together until well combined.
    For added flavor mix in Onion pepper and mushrooms
    Cook spaghetti noodles (Angel Hair Pasta is my fav) and drain.

    In a baking dish Make layers of spaghetti noodles, creamy chicken mix and Velveeta cubes
    Top with Velveeta slices
    Add more chicken broth or milk if you like it a little creamier

    Bake at 375 until cheese melts.
    Serve with salad and bread sticks

    Chicken Alfredo Birds Nests!

    Alfredo sauce:
    1 block of cream cheese
    2 cups of milk
    1 cup Parmesan cheese

    Melt all together in a pan on med heat and whisk until smooth!

    Make spaghetti according to the directions on the box.

    Grill chicken breasts.

    Mix the sauce with the cooked pasta, until creamy and slightly sticky.

    Place the pasta on a plate, grab the middle of the pile of pasta with tongs and twists until a “nest” shape.

    Place chicken in the middle!

    This is a great way to trick your kids into eating something healthy, because it looks awesome!

    Fettuccine with Artichoke and Mushroom Wine Sauce


    16 ounces Ronco Fettuccine
    3 tablespoons olive oil
    3 tablespoons butter
    1/2 cup yellow onion, diced fine
    2 tablespoons fresh herbs (basil, dill, cilantro), chopped
    12 ounces artichoke hearts, drained and quartered
    8 ounces mushrooms, washed, drained, and sliced
    1 lemon
    3/4 cup white wine
    3/4 cup vegetable stock
    1 cup Romano cheese, grated
    Salt and Pepper to taste


    Cook pasta according to package directions.
    Heat olive oil and butter over medium heat. Add onions, chopped herbs, and artichokes. Cook for 2 minutes. Add mushrooms and squeeze juice from the lemon into the skillet. Add wine and vegetable stock. Simmer.
    Stir in cheese and season to taste with salt and pepper. Add cooked fettuccine and blend together. Serve immediately.

    This is a spaghetti carbonara recipe from allrecipes.com. It is, hands down, my favorite pasta dish. I’m getting hungry just thinking about it! We use turkey bacon to make it slightly better for us. Yum!


    * 1 pound spaghetti
    * 1 tablespoon olive oil
    * 8 slices bacon, diced
    * 1 tablespoon olive oil
    * 1 onion, chopped
    * 1 clove garlic, minced
    * 1/4 cup dry white wine (optional)
    * 4 eggs
    * 1/2 cup grated Parmesan cheese
    * 1 pinch salt and black pepper to taste
    * 2 tablespoons chopped fresh parsley
    * 2 tablespoons grated Parmesan cheese


    1. In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside.
    2. Meanwhile in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels. Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in reused large skillet. Add chopped onion, and cook over medium heat until onion is translucent. Add minced garlic, and cook 1 minute more. Add wine if desired; cook one more minute.
    3. Return cooked bacon to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Quickly add 1/2 cup Parmesan cheese, and toss again. Add salt and pepper to taste (remember that bacon and Parmesan are very salty).
    4. Serve immediately with chopped parsley sprinkled on top, and extra Parmesan cheese at table.

    *My Favorite Lasagna*

    *12 uncooked Ronco lasagna noodles
    *2 cartons (15 oz. each) fat-free Ricotta cheese
    *1 egg
    *1 egg white
    *1 cup grated parmesan cheese, divided
    *1 garlic clove
    *1 teaspoon dried basil
    *1/2 teaspoon pepper
    *1/4 teaspoon ground nutmeg
    3 cups (12 oz.) shredded part-skim mozzerella cheese
    2 cans (15 oz. each) tomato sauce


    1. Cook noodles according to package directions. Rinse in cold water, drain well.
    2. In a large bowl combine the ricotta cheese, egg, egg white, 1/4 cup parmesan cheese, garlic, basil, pepper, and nutmeg. Set aside. In seperate bowl combine mozzerella cheese and remaining parmesan cheese.
    3. In a 13×9 inch baking dish coated with cooking spray, layer three noodles, 3/4 cup tomato sauce, one cup ricotta cheese mixture, and 3/4 cup mozzerella cheese mixture. Repeat layers three times.
    4. Bake, uncovered, at 375 degrees for 45-50 minutes, or until bubbly. Let stand 10 minutes before serving. Enjoy!!!
